Easy Mexican Rice

- 1 c. rice
- 1 can Ro-Tel tomatoes with green chilies, diced
- 1 Tbsp. cooking oil
- 1 (6 oz.) can V-8 juice or tomato juice
- 1 c. water
Directions

1Heat oil in heavy skillet.

2Add rice; stir for a minute or two until slightly golden.

3Reduce heat; add Ro-Tel tomatoes, juice and water.

4Stir well; cover and cook for about 15 to 20 minutes. Serves 4.
