  • 4 eggs
  • 2 cups sugar
  • 1-1/4 cup oil
  • 2 tsp. vanilla
  • 2 cups flour
  • 2 tsp. Magic Baking Powder
  • 2 tsp. baking soda
  • 1 tsp. ground ginger
  • 1/8 tsp. ground cloves
  • 1/2 cup raisins
  • 3 cups grated carrots
  • 1 cup walnuts, coarsely chopped

    Heat oven to 350 degrees F.

    Grease and flour a 10-inch springform pan.

    Beat eggs, sugar, oil and vanilla in large mixing bowl with electric mixer.

    In separate bowl, mix flour, baking powder, baking soda and spices.

    Add raisins and toss to coat.

    Add dry flour mixture to egg mixture.

    Stir in grated carrots and mix well.

    Fold in walnuts.

    Pour batter into prepared pan.
