  • 1 large eggplant
  • 1/4 c. shortening
  • 1 lb. ground beef
  • 1 tsp. salt
  • 4 onions, chopped
  • 1 can tomato soup

Directions

    Grease a 2-quart casserole dish.

    Slice unpeeled eggplant in 1/2-inch slices.

    Melt shortening in skillet and brown eggplant. Remove eggplant and then saute beef until it crumbles and loses its color.
