Easy Orzo

  • 3 Tablespoons Butter
  • 1-1/2 cup Orzo
  • 3 cups Chicken Broth
  • 1/2 cups Grated Parmesan Cheese
  • 6 Tablespoons Fresh Basil, Chiffonade
  • Salt And Pepper, to taste

Directions

    First, melt butter in a skillet over medium-high heat. Add the orzo and saute for about 2 minutes, until slightly brown.

    Add broth and bring to a simmer until orzo is tender and liquid is absorbed, about 15 minutes.

    Right before serving, mix in parmesan and basil. Season to taste with salt and pepper.

    Note: for a creamier variation of this recipe, try stirring in 2 tablespoons of plain yogurt thinned with a little milk.
