- 2 cups uncooked long grain white rice
- 6 cups water
- 2 (14 ounce) cans chicken broth
- 2 (15 ounce) cans sweet peas, drained
- 1 (8 ounce) package shredded Cheddar cheese
- 1 cup crushed buttery round crackers
Directions

1Preheat oven to 350 degrees F (175 degrees C).

2Lightly grease a 9x13 inch casserole dish.

3Bring rice and water to a boil in a pot.

4Cover, reduce heat to low, and simmer 15 minutes.

5Stir 1 can chicken broth and the peas into rice.

6Cover, and continue cooking 5 minutes.

7Transfer to prepared casserole dish.

8Pour remaining broth over rice mixture.

9Sprinkle evenly with cheese and top with crushed crackers.

10Bake 40 minutes in the preheated oven, until bubbly and golden brown.
