Easy Pineapple Chicken

- 3 large chicken breasts
- 1/4 cup flour, all-purpose
- 1/2 teaspoon black pepper
- 10 ounces pineapple chunks canned
- 2 tablespoons vegetable oil
- 1/2 cup pineapple juice from can of pineapple
- 3 tablespoons soy sauce, tamari
- 1 teaspoon vinegar
- 1 tablespoon cornstarch
Directions

1Remove skin and any bones from chicken and chop into a bite sized cubes.

2Mix flour and pepper on a plate or shallow bowl and dredge chicken until coated.

3Heat oil over medium high heat in a skillet.

4Cook coated chicken until golden brown.

5Add pineapple and cook for 5 minutes more.

6In a small bowl, combine soy sauce, vinegar, and cornstarch.

7Add sauce to pan and simmer for 5 minutes
