Easy Pineapple Pie

  • 1 can crushed pineapple in syrup (20 oz.)
  • 1 (4 serving size) pkg. instant lemon pudding and pie filling
  • 1 c. milk
  • 1 (4 oz.) carton frozen whipped topping, thawed
  • 1 tsp. grated lemon peel (if desired)
  • 2 Tbsp. lemon juice
  • 1 (8 or 9-inch) graham cracker pie crust

    Drain pineapple well.

    Combine pudding mix and milk in medium bowl.

    Beat 2 to 3 minutes until very thick.

    Fold in whipped topping, pineapple, lemon peel and lemon juice.

    Pour into crust. Cover and refrigerate 4 hours or overnight.

    Garnish as desired.
