  • 1 tablespoon olive oil
  • 1/2 onion cut in thick slices
  • 2 garlic cloves
  • 1 chili pepper poblano, seeded, cut in big slices
  • 1/2 teaspoon oregano ground
  • 1/2 cup tomato sauce
  • 400 grams mushrooms sliced
  • 4 cups water you can substitute it with chicken stock
  • salt as desired
  • pepper as desired

    Preheat the olive oil in a medium cooking pot.

    Add the onion and garlic cloves to the pot and let them cook until the onion browns.

    Add the poblano pepper to the skillet and cook for 1 minute.

    Remove all the ingredients from the skillet and place them in a blender.

    Add the water, tomato sauce, and oregano to the blender and mix them.

    Add the mushrooms to the cooking pot and let them cook on high until they brown.

    Add the blended sauce, salt, and pepper to the pot and let it boil for 5 minutes.

    Turn off the stove and serve.
