Easy Pineapple Upside-Down Cake

  • 1 (20 oz.) can sliced Del Monte pineapple in its own juice
  • 1/2 c. butter or margarine
  • 1 c. firmly packed brown sugar
  • 1/2 c. pecan halves
  • 1/2 c. shredded coconut (optional)
  • maraschino cherries, halved (optional)
  • 1 (18 oz.) pkg. yellow cake mix

    Drain pineapple, reserving juice. In 350° oven, melt butter in 13 x 9-inch baking dish. Remove and sprinkle with sugar, nuts, coconut and cherries. Top with pineapple. To reserved juice, add water to measure liquid specified on cake package. Prepare as package directs. Spread over fruit. Bake 35 to 40 minutes or until tests done. Cool 5 minutes; invert onto large serving dish.
