- 4 oz. bacon, diced
- 1 c. chopped onion
- 2 c. milk or cream
- 2 c. chicken broth
- 1 tsp. crushed thyme
- 3 1/2 c. firmly packed uncooked frozen mashed potatoes
- 2 Tbsp. fresh chopped parsley
- dash of salt and pepper
Directions

1Saute bacon and onion until bacon begins to crisp; remove excess bacon grease, if desired.

2Add milk, broth and thyme; bring to a boil.

3Stir in potatoes; simmer 5 minutes.

4Stir in parsley, salt and pepper.
