Easy Salisbury Steak

  • 1 (10 oz.) can cream of mushroom soup, divided
  • 1/3 c. dry bread crumbs
  • 1/4 c. sweet onion, finely chopped
  • 1 1/2 c. fresh mushrooms, sliced
  • 1 lb. lean chopped beef
  • 1 large egg, beaten
  • 1/4 c. green pepper, finely chopped
  • salt and pepper to taste

Directions

    In a large bowl, mix 1/4 cup of the soup, beef, bread crumbs, egg, onions and peppers.

    Shape into 6 patties.

    In a large skillet over medium heat, cook patties until brown on both sides. Spoon off all fat.

    Stir in remaining soup and the fresh mushrooms; add salt and pepper.

    Return patties to skillet and reduce heat to low.

    Cover and simmer until done, turning patties occasionally (about 20 minutes).
