Easy Smoked Salmon

  • 1 salmon fillet (about 2 pounds)
  • 2 tablespoons brown sugar
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 to 2 tablespoons liquid smoke

    Place salmon, skin side down, in an 11x7-in. baking pan coated with cooking spray. Sprinkle with brown sugar, salt and pepper. Drizzle with liquid smoke. Cover and refrigerate for 4-8 hours.

    Drain and discard liquid. Bake, uncovered, at 350° until fish flakes easily with a fork. 35-45 minutes. Cool to room temperature. Cover and refrigerate for 8 hours or overnight.
