Ingredients

  • 1 (16 oz.) bag frozen vegetables
  • 1/2 to 1 lb. ground beef
  • 1 (28 oz.) can tomatoes, mashed
  • 4 large potatoes, diced
  • 1 chopped onion
  • 3 bay leaves
  • 1/2 tsp. oregano
  • 1 Tbsp. sugar
  • 2 Tbsp. salt

Directions

    Put frozen vegetables in 2 quarts of boiling water.

    Brown meat; drain.

    Add to vegetables with rest of ingredients. Simmer until vegetables are tender and seasonings are well blended. Remove bay leaves.

    Makes about 10 servings.

    Serve with corn bread.

    Freezes well or keeps several days in refrigerator.
