Easy & Spicy Enchilada Bake

Ingredients

  • 1 packages small flour tortillas (or corn tortillas if you prefer)
  • 1 lb ground beef, chicken or pork
  • 1 container of Philadelphia Southwest cooking cream (or Chipotle flavor if you want spicier)
  • 1 small diced onion
  • 1/4 each diced red and green peppers
  • 1 tsp season salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 cup your favorite salsa
  • 1 10 or 12 oz can of enchilada sauce
  • 1 packages shredded cheddar or colby/jack cheese

    Brown meat with all seasonings.

    Add peppers and onions 3/4 way through cooking, then drain.

    Add cooking cream & mix.

    Preheat oven @ 400 .

    Mix salsa & enchilada sauce together.

    In a round pan or spring form pan lined with foil, put small amount of enchilada mixture on bottom.

    Take a flour tortilla & place on top.

    Spread meat mixture on tortilla, sprinkle some cheese, tortilla, then pour small amount of sauce again.

    Repeat steps until layers are even with top of pan, finishing with tortilla, sauce to cover whole layers and then cheese.

    Cover with foil & bake for 40 minutes, then serve with salad, sour cream and guacamole.
