- 1 1/2 cups light brown sugar
- 1 cup salad oil
- 1 tablespoon vanilla
- 2 large eggs
- 2 cups flour
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 3 cups quick-cooking oats
- 1/4 cup granulated sugar
Directions

1Preheat oven to 375°F.

2In a large bowl, with mixer at medium speed, beat brown sugar, salad oil, vanilla, and eggs until smooth.

3With mixer at low speed, beat in flour, baking soda and salt until blended.

4With a spoon, stir in oats.

5Place sugar in a bowl.

6Roll level tablespoons dough into balls; roll ball in sugar and place on a large greased cookie sheet, about 2 inches apart.

7Bake about 10 minutes or until golden, remove to wire racks to cool.

8Store cookies in a tightly covered container.
