Easy Squash Casserole

Ingredients
- 2 lbs yellow squash
- 1 medium onion, chopped
- 4 T butter, divided
- 3/4 cup sharp cheddar cheese, grated
- 1 cup sour cream
- 1 t salt
- 1/2 t pepper
- 1 egg whisked
- 1/2 cup Pepperidge Farm stuffing mix, plain
- 1 t paprika
Directions

1Cook squash until tender (slice and boil in water until tender, drain or slice and saute in pan)

2Mash with fork after draining

3Let stand until cool

4Saute onion in 2 T butter until yellow, not brown

5Mix squash, onions, cheese, sour cream, salt, pepper and egg

6Gently pour into greased casserole dish

7Sprinkle stuffing mix on top and dot with 2 T butter
-
8Sprinkle paprika on top
-
9Cook uncovered 30 minutes @ 350 or til bubbly
