- 4 fillets of haddock
- 1 1/2 Tbsp. olive oil
- 1/3 c. onion, diced
- 2 stalks celery, chopped
- 1 c. Italian bread crumbs
Directions

1Saute onion and celery in olive oil until soft.

2Add bread crumbs and mix.

3Lay 2 fillets in greased baking dish.

4Mound stuffing over fillets.

5Top with remaining fillets.

6Anchor with toothpicks.

7Bake at 450° for 20 minutes or until fish flakes. Serves 4.
