Ingredients

  • 2 chicken breasts
  • 1 (12 ounce) can black beans
  • 1 (12 ounce) can corn
  • 1 (1 ounce) packet ranch dressing mix
  • 1 (1 ounce) packet taco seasoning
  • 1 cup white rice
  • tortilla
  • cheddar cheese, for topping
  • salsa, for topping

Directions

    Cut chicken into 1/2 inch cubes.

    Begin cooking chicken in large skillet.
  3. 3
    Boil 2 cups of water and add rice.
  4. 4
    Once chicken is done add 1/2 cup of water to skillet and begin adding your seasoning packets.

    Reduce heat and let simmer.

    Add in can of black beans, drained and corn drained into skillet, heat through.

    Once rice is finished add it to the skillet with the rest of the ingredients.

    Stuff tortillas with the filling, add cheddar cheese and salsa if desired.
