Easy To Do Quiche

Ingredients
- 9-inch unbaked pie shell (make your own; I buy mine)
- 1 c. (4 oz.) shredded Cheddar cheese
- 2 Tbsp. grated Parmesan or Romano cheese
- 1 c. vegetables, cooked and drained (zucchini, mushrooms, broccoli or spinach, used alone or in combination)
- 6 eggs
- 1 1/2 c. half and half (I use 2% milk)
- 1 Tbsp. minced onion (can use instant)
- 1/2 tsp. oregano leaves, crushed*
- salt to taste
Directions

1Preheat oven to 375°.

2Sprinkle pie shell with both cheeses. Add vegetables to pie shell.

3Beat eggs, milk, onion and oregano together in large bowl; pour over cheese and vegetables.

4Bake for 30 to 35 minutes, or until knife inserted near center comes out clean.

5Let stand a few minutes before serving.
