  • 2 cups graham cracker crumbs
  • 1 cup powdered sugar
  • 1 tablespoon powdered sugar
  • 1 cup pecan pieces
  • 1 cup semi-sweet chocolate chips
  • 3 tablespoons unsweetened cocoa powder
  • 1 tablespoon butter, melted
  • 1 tablespoon corn syrup
  • 2 teaspoons vanilla extract

Directions

    In a food processor, pulse together graham cracker crumbs, 1 cup powdered sugar, pecans, chocolate chips and 2 tbsp cocoa powder until nuts and chips are finely ground.

    Add butter, corn syrup, vanilla and 1 1/2 teaspoons water.

    Pulse to blend well.

    Form into 1 inch balls.

    In a shallow bowl, blend remaining 1 tablespoon each cocoa powder and powdered sugar.

    Roll balls in cocoa sugar to coat lightly.

    Refrigerate 20 minutes, until firm.
