- 1 lb. lean ground beef
- 1 envelope onion soup mix
- 3 potatoes, cubed
- 1 (10 oz.) bag frozen peas
- 1 (10 oz.) bag frozen green beans
- 1 (10 oz.) pkg. frozen corn
- 2 stalks celery, chopped
- 1/2 c. barley
- 1 (46 oz.) can vegetable juice
- 8 c. water
Directions

1Cook ground beef until it crumbles.

2Drain fat, then put meat in a colander.

3Rinse with hot water to remove any extra fat. Place all ingredients in a 5-quart Dutch oven.

4Simmer until barley is done.
