  • 1/2 cup chopped onion
  • 2 tsp. margarine or butter
  • 1 qt. (4 cups) chicken broth
  • 2 medium carrots, peeled, sliced and halved (about 1 cup)
  • 2 medium potatoes, peeled, chopped Safeway 2 pkg For $5.00 thru 02/09
  • 1 cup cut green beans
  • 1 Tbsp. chopped fresh parsley
  • 1 tsp. dried tarragon leaves
  • 1/4 tsp. ground black pepper
  • saltine crackers

Directions

    Cook onion in margarine in large saucepan on medium-high heat until tender.

    Add chicken broth, carrots, potatoes, green beans, parsley, tarragon and pepper.

    Bring to boil.

    Reduce heat to medium-low; simmer 20 min.

    or until vegetables are tender.

    Serve hot with crackers.
