- 1/2 cup pearl barley
- 5 medium potatoes
- 3 ounces fresh spinach
- 1 carrot
- 14 ounces chicken broth
- 1 tablespoon butter
- 1/2 tablespoon red pepper flakes
- 1/4 cup light cream
Directions

1Cook barley in covered pot till soft.

2Drain and put barley aside.

3Dice, peel and cook potatoes in chicken broth till soft.

4Mash till almost smooth.

5Add shredded carrot and finely chopped spinach.

6Cook till vegetables soften. 5 minutes.

7Add cooked barley and stir to mix.

8Add butter and cream right before serving.
