Edam and Bean Wraps

- 1 pepper
- 420 g beans
- 160 g sweetcorn
- 6 tablespoons salsa
- 6 tortillas
- 125 g lettuce
- 125 g edam cheese
- 6 tablespoons yoghurt
Directions

1Deseed and dice the pepper, drain and rinse the beans.

2In a bowl, mix them with the sweetcorn and salsa.

3Arrange some of the lettuce over the base of a tortilla.

4Spoon some of the bean mixture onto the top of the centre of the tortilla, then top with a handful of Edam.

5Spoon 1 tbsp yoghurt on top.

6Carefully roll up the tortilla, tucking in the ends as you go and cut in half on the diagonal.

7Repeat with the remaining tortillas and filling.
