Edam and Bean Wraps

  • 1 pepper
  • 420 g beans
  • 160 g sweetcorn
  • 6 tablespoons salsa
  • 6 tortillas
  • 125 g lettuce
  • 125 g edam cheese
  • 6 tablespoons yoghurt

Directions

    Deseed and dice the pepper, drain and rinse the beans.

    In a bowl, mix them with the sweetcorn and salsa.

    Arrange some of the lettuce over the base of a tortilla.
  4. 4
    Spoon some of the bean mixture onto the top of the centre of the tortilla, then top with a handful of Edam.

    Spoon 1 tbsp yoghurt on top.

    Carefully roll up the tortilla, tucking in the ends as you go and cut in half on the diagonal.

    Repeat with the remaining tortillas and filling.
