Egg And Spinach Casserole

- 1 pkg. frozen spinach or 1 1/2 lb. fresh spinach
- 2 to 3 eggs
- 1/2 tsp. salt
- 1/2 small can evaporated milk
- 4 Tbsp. freshly grated American cheese
- 1 1/2 Tbsp. melted butter
- 1 c. well rounded freshly pulled bread crumbs
Directions

1Pull crumbs from inside of bread and measure, packing lightly. Place in bowl the melted butter and crumbs, thoroughly mixing with 2 forks.

2Wash fresh spinach several times to thoroughly wash. Drain well and cook in a small amount of water in covered saucepan until tender.

3When done, drain thoroughly and chop fine.

4Season with 1/2 teaspoon salt and pepper to taste.

5Place spinach in a well buttered casserole or shallow baking dish (not too large as this is a small recipe).

6Make 2 depressions in spinach with a spoon.

7Drop the raw eggs into these depressions.

8Sprinkle eggs slightly with salt and pepper.

9Heat milk and cheese until cheese is melted.

10Season and pour cheese sauce slowly over the eggs and spinach.

11Cover with the buttered bread crumbs and bake in a 375° oven for about 25 minutes.

12If not brown at this stage, place under broiler to brown and serve.

13Serves 2 to 3.
