Ingredients
- 5 c. seasoned croutons (seasoned salad croutons or dressing croutons)
- 5 c. grated Cheddar cheese and Swiss cheese
- 8 eggs, beaten
- 1 1/2 tsp. dry mustard
- 5 c. milk
- 2 c. canned mushroom soup
- 1 large jar mushrooms (I cook fresh ones instead)
- 2 onions, chopped and cooked
- 2 lb. Italian hot sausage, cooked and added to onions (use hot sauce if you do not use hot sausage)
Directions

1Grease casserole (use a pretty large one).

2Layer with croutons, cheeses, cooked sausage and onions.

3Mix eggs, mustard, milk, mushroom soup and mushrooms (I season with some curry; it really adds a good flavor).

4Pour over top and cover overnight. Bake at 300° for 1 1/2 hours or until eggs are set.

5Serves quite a few people.
