Egg Casserole

Ingredients

  • 5 c. seasoned croutons (seasoned salad croutons or dressing croutons)
  • 5 c. grated Cheddar cheese and Swiss cheese
  • 8 eggs, beaten
  • 1 1/2 tsp. dry mustard
  • 5 c. milk
  • 2 c. canned mushroom soup
  • 1 large jar mushrooms (I cook fresh ones instead)
  • 2 onions, chopped and cooked
  • 2 lb. Italian hot sausage, cooked and added to onions (use hot sauce if you do not use hot sausage)

Directions

    Grease casserole (use a pretty large one).

    Layer with croutons, cheeses, cooked sausage and onions.

    Mix eggs, mustard, milk, mushroom soup and mushrooms (I season with some curry; it really adds a good flavor).

    Pour over top and cover overnight. Bake at 300° for 1 1/2 hours or until eggs are set.

    Serves quite a few people.
