  • 3 eggs
  • 3 c. sugar
  • 4 1/2 c. milk
  • 3 Tbsp. butter
  • 1 tsp. vanilla

Directions

    Melt butter; add milk.

    Heat to scalding.

    Beat eggs slightly; add sugar and vanilla and swirl into milk.

    Strain into a 9-inch pastry lined pan.

    Sprinkle with nutmeg.

    Bake at 470° for 10 minutes, then at 375° for 10 minutes.

    (Brush crust with unbeaten egg white before adding custard mix.)
