Egg Drop Soup

  • 3 qt. water
  • 1 or 2 pieces skinned chicken
  • 6 bouillon cubes
  • 1/2 tsp. white pepper
  • 2 eggs
  • 2/3 c. cornstarch with 1 c. water to dissolve
  • 1/2 tsp. yellow food coloring
  • chopped green onions

Directions

    Boil chicken with water at high heat, add the chicken bouillon cubes and white pepper.

    Remove chicken when done.

    In boiling water drop eggs in, lightly scrambling as you drop them in.

    Then add the cornstarch mixture and food coloring, stirring constantly for 30 seconds.

    Remove from heat.

    When serving, toss in green onion.
