  • 5 eggs
  • 1 c. cooked, chopped shrimp
  • 1 c. bean sprouts
  • 1/4 c. sliced mushrooms (fresh)
  • 3 Tbsp. thinly sliced water chestnuts
  • 2 Tbsp. finely chopped celery
  • 3 Tbsp. cooking oil

Directions

    Beat eggs well.

    Add shrimp and vegetables; mix thoroughly. Heat oil in skillet.

    Place about 1/4 cup egg mixture in oil; brown lightly on each side.

    Serve with sweet-sour sauce and soy sauce and sprinkle with green onions.
