- 1 medium green pepper, chopped
- 1 medium onion, chopped
- 1/4 c. Wesson oil
- 1 c. cooked shrimp
- 1 can sliced water chestnuts
- 1 c. bean sprouts, drained
- 3 Tbsp. soy sauce
- 5 eggs
Directions

1Cook green pepper and onion in oil until tender.

2Add shrimp, water chestnuts, bean sprouts and soy sauce.

3Remove from heat. Beat eggs until well mixed.

4Pour over vegetable and shrimp mixture.

5Cover and cook over low heat, without stirring, for about 20 minutes, until eggs are done.
