- 1 c. bean sprouts, drained
- 1 small onion, chopped
- salt and pepper to taste
- butter (to cook with)
Directions

1Combine eggs and other ingredients.

2Put 1/2 cup mixture in hot buttered skillet; cook until set and flip over to cook other side.

3Place on Earthen Ware dish with heaping mound of rice. Serve with Chinese Brown Gravy.
