  • 12 eggs
  • 1 cup grated low-fat cheddar cheese
  • 3 green onions, minced
  • 4 tablespoons mushrooms
  • 6 slices Canadian bacon, chopped
  • 1 teaspoon salt
  • 1 teaspoon pepper

Directions

    In the bottom of prepared muffin cups layer the meat & veggies plus cheese & green onions.

    You want the muffin pan to be about 2/3 full, with just enough room to pour a little egg around the other ingredients.

    Break eggs into large measuring bowl with pour spout, beat well.

    Pour egg into each muffin cup until it is 3/4 full.

    Stir slightly with a fork to mix veggies & meat.

    Bake 25-35 minutes until muffins have risen & are slightly brown & set.
