- 3 eggs
- pinch of salt (1/8 tsp.)
- 2 c. flour
Directions

1Beat eggs slightly; add salt and enough flour to make a stiff dough.

2Knead well.

3Let stand 1/2 hour, covered.

4Roll out very thin.

5Spread on cloth to dry.

6Must not be sticky or so dry it will be brittle.

7Cut into 3-inch strips.

8Layer them, cut crosswise in very fine strips and toss them lightly to separate. Spread out to dry.

9Put into covered jar for future use.

10Drop into boiling soup 5 minutes before serving.
