- 1/4 c. chopped onion
- 2 Tbsp. butter
- 1/2 c. milk
- 6 eggs, hard-cooked
- 1/4 c. chopped green pepper
- 10 3/4 oz. mushroom soup
- 2 c. cooked rice
Directions

1Saute onion and green pepper in butter until tender.

2Add mushroom soup and milk; reserve 1/2 cup of mixture.

3Stir rice into remaining mixture.

4Put in a greased 9 x 12-inch dish.

5Cut eggs in half lengthwise; press the halves into rice mixture. Drizzle reserved soup mixture over eggs and cover.

6Bake at 350° for 25 minutes.

7Serves 4.
