Egg-Stuffed Peppers

  • 2 whole Eggs, Beaten
  • 1 whole Bell Pepper, Sliced In Half And Hollowed
  • 1/4 cups Chopped Peppers
  • 1 Tablespoon Cheddar Cheese, Grated

    Preheat oven to 250 F, and begin by scrambling the eggs. My hubby is the best at this. You basically pour the beaten eggs into a skillet over low heat. Then move the eggs around once in a rare while as they cook on low heat. Once eggs are solidified remove from heat.

    Fill pepper halves with the scrambled eggs and top with the chopped peppers (or any toppings of your choice) and cheese. Place them in a baking dish and bake them in the oven for about 10-15 minutes. Remove from oven and eat!

    Other ingredient suggestions: spinach, onions, peppers, tomatoes, or some non-vegetarian options such as ham, salami, pepperoni, or sausage.
