  • 1 puff pastry
  • 4 1/4 cups milk
  • 8 egg yolks
  • 1 1/2 cups sugar
  • 3/4 cup flour or cornstarch
  • 1/2 lemon zest
  • 1 cinnamon stick

    Preheat oven to 250 degrees Celsius.

    In a saucepan, bring the milk, lemon peel, and cinnamon stick to a boil.

    In another small pan, add the flour and sugar, and mix.

    After the milk boils, discard the lemon zest and the cinnamon stick.

    Pour the milk into pan with flour and sugar.

    Mix well, and heat again. Add egg yolks, and stir well until thickened.

    Remove from heat, and fill the pans.

    Bake until slightly golden on top, about 10 to 15 minutes.
