- 6 teaspoons vanilla extract
- 6 teaspoons almond extract
- 1 cup superfine sugar
- 3 cups heavy cream
- 20 ounces rum (Dark)
- nutmeg
- cinnamon
Directions

1Separate the eggs.

2Mix the whites with vanilla and almond extract, and beat into stiff peaks.

3Mix the yolks with half the sugar.

4Mix the cream with remaining sugar, and beat into stiff peaks.

5Carefully fold the yolks into the whites.

6Fold the cream into the egg mixture.

7To make each serving, fold 2 ounces spirit into 1/10 of the mixture.

8Pour over a few ice cubes in a cocktail glass.

9Garnish with nutmeg and cinnamon.
