- 1 1/2 lb. lean ground turkey or beef
- 1 large onion, pureed in blender
- 2 green peppers (optional)
- 1 Tbsp. sea salt
- 2 Tbsp. shortening (optional)
- 2 tsp. oregano
- 1 1/2 c. canned tomatoes, pureed
- 2 Tbsp. chili powder
- 1 pkg. frozen corn (2 c.)
- 1 pkg. frozen peas
- 1 pkg. frozen beans
- 8 oz. pkg. noodles
- 1 lb. sharp Cheddar cheese, shredded
Directions

1Cook meat in shortening until it turns white.

2Add onion, peppers (optional), salt, oregano, tomatoes, chili powder and vegetables.

3Cover and simmer for 45 minutes.

4Cook noodles according to package directions; drain and combine with meat mixture.

5Spoon mixture into two 2-quart baking dishes and cover evenly with shredded cheese.

6Bake covered at 350° for 45 minutes. Yields 9 to 12 servings.

7Better made 24 to 36 hours before cooking to season.
