Ingredients

  • 1 medium eggplant, peeled and chopped
  • 1 or 2 hot red peppers, chopped or powdered cayenne or Tabasco sauce (optional)
  • 1 medium onion, diced
  • 1 can tomatoes or 1 pt. home canned
  • 1 tsp. chili powder
  • salt and pepper to taste
  • 2 or more leftover biscuits

Directions

    Mix eggplant, onion, peppers, salt and pepper in saucepan. Cover with water.

    Cook 10 minutes.

    Add tomato and chili powder. Simmer until tender.
  4. 4
    Add crumbled biscuits, enough to thicken. Stir constantly.
