- 1 medium eggplant, peeled and chopped
- 1 or 2 hot red peppers, chopped or powdered cayenne or Tabasco sauce (optional)
- 1 medium onion, diced
- 1 can tomatoes or 1 pt. home canned
- 1 tsp. chili powder
- salt and pepper to taste
- 2 or more leftover biscuits
Directions

1Mix eggplant, onion, peppers, salt and pepper in saucepan. Cover with water.

2Cook 10 minutes.

3Add tomato and chili powder. Simmer until tender.

4Add crumbled biscuits, enough to thicken. Stir constantly.
