  • 1 medium eggplant
  • 1 minced garlic clove
  • 3 Tbsp. olive oil
  • 1 c. crushed tomatoes
  • 1/4 c. slivered basil
  • 5 oz. cubed Mozzarella
  • 1/2 c. cooked rigatoni

Directions

    Saute the eggplant (cubed) with minced garlic in olive oil. Stir in the tomatoes and simmer for 10 minutes.

    Toss with basil, cubed Mozzarella and rigatoni.
