- 1 unpeeled eggplant, finely diced
- 1/3 c. olive oil
- 2 onions, diced
- 4 stalks celery, diced
- 2 cloves garlic, minced
- 2 Tbsp. olive oil
- 2 Tbsp. wine vinegar
- 1 tsp. sugar or substitute
- 1 (16 oz.) can tomatoes
- 1 c. sliced green olives
- 1/8 tsp. salt
- 1/4 tsp. pepper
Directions

1Heat 1/3 cup olive oil in large skillet or wok.

2Add eggplant and saute until tender.

3Remove from skillet.

4Add 2 teaspoons olive oil to skillet.

5Add onions, celery and garlic; saute about 5 minutes.
