Ingredients

  • 1 unpeeled eggplant, finely diced
  • 1/3 c. olive oil
  • 2 onions, diced
  • 4 stalks celery, diced
  • 2 cloves garlic, minced
  • 2 Tbsp. olive oil
  • 2 Tbsp. wine vinegar
  • 1 tsp. sugar or substitute
  • 1 (16 oz.) can tomatoes
  • 1 c. sliced green olives
  • 1/8 tsp. salt
  • 1/4 tsp. pepper

Directions

    Heat 1/3 cup olive oil in large skillet or wok.

    Add eggplant and saute until tender.

    Remove from skillet.

    Add 2 teaspoons olive oil to skillet.

    Add onions, celery and garlic; saute about 5 minutes.
