  • 3 Tbsp. olive oil
  • 3 garlic cloves, minced
  • 1 large eggplant, peeled and diced
  • 1 Tbsp. water
  • 1 c. seasoned bread crumbs
  • 1/2 c. fresh parsley, chopped
  • 2 eggs, beaten
  • 1/2 c. grated cheese

Directions

    In large saucepan, heat oil and gently saute garlic until golden brown.

    Add diced eggplant and the tablespoon of water and cover.
  3. 3
    Reduce heat and gently steam until eggplant is very soft.
