- 1 medium eggplant, peeled and sliced
- 1 1/2 c. cracker crumbs
- 4 eggs
- 1/2 tsp. pepper
- 1 1/2 c. grated sharp cheese
- 1 1/2 c. milk
- 1 tsp. salt
- 1 stick margarine, melted
Directions

1Preheat oven to 325°.

2Cook eggplant until mushy; drain.

3Add all ingredients, reserving 1/2 cup cheese, 1/2 cup crumbs and small amount of butter.

4Mix well.

5Pour into baking dish; sprinkle with reserved cheese, cracker crumbs and melted butter. Bake at 325° for 25 to 30 minutes.
