Eggplant Casserole

  • 1 medium eggplant, peeled and sliced
  • 1 1/2 c. cracker crumbs
  • 4 eggs
  • 1/2 tsp. pepper
  • 1 1/2 c. grated sharp cheese
  • 1 1/2 c. milk
  • 1 tsp. salt
  • 1 stick margarine, melted

Directions

    Preheat oven to 325°.

    Cook eggplant until mushy; drain.

    Add all ingredients, reserving 1/2 cup cheese, 1/2 cup crumbs and small amount of butter.

    Mix well.

    Pour into baking dish; sprinkle with reserved cheese, cracker crumbs and melted butter. Bake at 325° for 25 to 30 minutes.
