Cherry Pudding

Ingredients

  • 1 cup flour, all-purpose
  • 1 large eggs beaten
  • 1 cup sugar
  • 1/2 cups cherry juice
  • 1/2 teaspoon salt
  • 1 tablespoon butter melted
  • 15 ounces cherries tart, 1 can, drain and reserve juice
  • 1 cup walnuts chopped
  • 1 teaspoon baking soda mixed with 1 teaspoon water
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon flour, all-purpose
  • 1 teaspoon butter
  • 1 x cherry juice remaining cherry juice with enough water to measure 1 cup, cook until thick, 5 or 6 minutes.

    Blend together flour, sugar and salt.

    Beat egg, add 1/2 cup cherry juice and melted butter, add baking soda mixture, add to flour, sugar, salt mixture.

    Mix well.

    Add chopped nuts and cherries.

    Pour into a greased loaf pan and bake at 350F (180C) for 45 minutes.

    Remove from oven and poke holes with a fork and pour hot sauce over pudding.

    Cool and refrigerate.

    Serve with whipped cream.
