- 1 large eggplant
- 2 Tbsp. butter
- 1/2 c. onion, chopped
- 1 can tomatoes
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 c. corn bread crumbs
- 2 eggs, beaten
- 1/2 c. evaporated milk
- 1/4 lb. grated Cheddar cheese
- toasted bread crumbs
- 1 stick oleo
Directions

1Peel and saute eggplant in 2 tablespoons butter until tender. Drain and mash.

2Mix in order given.

3Pour into baking dish.

4Top with 1 cup toasted bread crumbs with 1 stick oleo.

5Bake at 250° until brown.
