- 1 eggplant, peeled and diced
- 1 green pepper, chopped
- 1 small onion, chopped
- 1/3 c. uncooked soy grits
- 2 c. stewed or canned tomatoes
- season to taste
Directions

1Place a layer of diced eggplant in casserole.

2Top with layer of green pepper and onion.

3Sprinkle on the soy grits.

4Top with rest of eggplant, pepper and onion.

5Add tomatoes.

6Cover and bake 40 minutes in a moderate oven.
