- 1 medium eggplant, peeled and cubed
- 1 medium onion, grated
- 1 small jar chopped pimento
- 1 tsp. poultry seasoning
- 4 slices bread, crumbled
- 2 Tbsp. butter, melted
- 1/2 c. evaporated milk
- 1 egg, beaten
- grated cheese
Directions

1Boil eggplant until tender.

2Soak bread in milk.

3Add eggplant and other ingredients to the bread mixture.

4Place in a 1 1/2-quart casserole dish.
