  • 1 medium eggplant
  • 1/2 lb. ground beef
  • 1/2 stick oleo
  • 2 eggs, slightly beaten
  • 1 small green pepper, chopped
  • 1 c. cheese, grated
  • 1 c. pimento pepper (optional)
  • 2 c. whole or cream-style corn
  • 1/2 c. onions, chopped
  • salt and pepper to taste
  • 1 c. cracker crumbs

    and cook in small amount of water until tender.

    Drain and combine the remaining ingredients in baking dish.

    Bake at 350° for 45 minutes. Put some grated cheese on top.
