  • 2 medium eggplants
  • 1 c. milk
  • 2 eggs
  • 1 medium onion
  • 1 c. Italian seasoned bread crumbs
  • 1/2 stick butter
  • grated sharp Cheddar cheese (as desired)

Directions

    Peel, slice and cook until just tender.

    In casserole, place a layer of eggplant, grated cheese, slice of butter and bread crumbs.

    Repeat.

    Beat eggs, milk and grated onion and pour over it.

    Bake, uncovered, in 400° oven for 30 minutes.
