- 2 medium eggplants
- 1 c. milk
- 2 eggs
- 1 medium onion
- 1 c. Italian seasoned bread crumbs
- 1/2 stick butter
- grated sharp Cheddar cheese (as desired)
Directions

1Peel, slice and cook until just tender.

2In casserole, place a layer of eggplant, grated cheese, slice of butter and bread crumbs.

3Repeat.

4Beat eggs, milk and grated onion and pour over it.

5Bake, uncovered, in 400° oven for 30 minutes.
