- 1 eggplant, peeled and quartered
- 1/2 c. milk
- 1 small chopped onion
- 1 1/2 c. bread crumbs
- 2 slices bread
- 2 beaten eggs
- 1 1/2 c. grated cheese
- dash of salt and pepper
Directions

1Preheat oven to 400°.

2Boil peeled and quartered eggplant in salt water until tender.

3Soak 2 slices of bread in milk.

4Mash eggplant with bread.

5Add eggs, onion, salt and pepper.

6Mix cheese with this and put in greased casserole dish. Sprinkle with bread crumbs. Bake at 400° for about 45 minutes.
