  • 1 eggplant, peeled and quartered
  • 1/2 c. milk
  • 1 small chopped onion
  • 1 1/2 c. bread crumbs
  • 2 slices bread
  • 2 beaten eggs
  • 1 1/2 c. grated cheese
  • dash of salt and pepper

    Preheat oven to 400°.

    Boil peeled and quartered eggplant in salt water until tender.

    Soak 2 slices of bread in milk.
  4. 4
    Mash eggplant with bread.

    Add eggs, onion, salt and pepper.

    Mix cheese with this and put in greased casserole dish. Sprinkle with bread crumbs. Bake at 400° for about 45 minutes.
